Some things we have recently found while doing SBS 2011 upgrades:
1. Make sure you have documentation of your DNS and DHCP environments. Having workstations looking for the old server when attempting to log on can be painful…..
2. Budget enough time to move your mailboxes. Perform a couple of test moves to the new server before the actual cut-over to get a good estimate of what it will actually take.
3. Make sure you have a good backup of your SystemState and C:\Windows and C:\Program Files directories BEFORE you start.
